New Executive Sous Chef at Anantara Eastern Mangroves Abu Dhabi

Anantara Eastern Mangroves Abu Dhabi Hotel has appointed a new Executive Sous Chef, who joins the property’s culinary team under Executive Chef Idin Asmitha.

With more than 15 years of experience in fine-dining kitchens around the globe, Federico Sanna brings a world of gastronomic influences to Anantara Eastern Mangroves Hotel.

Born and raised on the Italian island of Sardinia, Sanna grew up in the family’s restaurant business, exposed to the richly varied cuisines of the Mediterranean, including North African, Middle Eastern and Southern European. The chef has since worked in several esteemed fine-diners across Italy, Switzerland, the UK, the US, France and Dubai, perfecting his signature blend of tradition and innovation.

“I’m thrilled to be starting this new chapter at Anantara Eastern Mangroves Abu Dhabi Hotel – not only to share the knowledge and techniques I’ve accrued over the years, but to learn new skills from a distinguished team,” said Sanna.

The new Executive Sous Chef will be joining Executive Chef Idin in leading the culinary program at Anantara Eastern Mangroves Hotel, which includes Abu Dhabi’s brunch hotspot Ingredients restaurant and Thai fine-dining restaurant Pachaylen.
